In the past, in the mountainous regions of Crete, the locals had to find ways to maintain the large quantities of meat they had and using the incredible herbs and spices of the Cretan land they made the very unique "apaki" from fat-free pork meat. Cretan sausages are a mix of beef and mountain spices.
